Cream of Cauliflower Soup
Title: Cream of Cauliflower Soup Categories: Soups Yield: 1 Servings 4 c Cauliflower; cut in small -flowerets 3 c Water 2 tb Instant onion 1 sm Bay leaf 2/3 c Nonfat dry milk 2 pk Instant chicken broth mix Salt and pepper to taste In a medium saucepan combine cauliflower, water, broth mix, onion and bay leaf. Bring to a boil. Simmer until cauliflower is tender, about 10 minutes. Remove and discard bay leaf. Place cauliflower mixture in a blender. Add dry milk. Blend until cauliflower is just pureed.
