Title: Cream of Cucumber Soup

Yield: 1 Servings

3 tb Butter or margarine
3 tb Flour
3 c Milk
1 1/2 ts Salt
2 md Cucumbers
1 c Boiling water
1/2 ts Grated onion

Melt butter in top of double boiler over direct heat. Add flour gradually
and blend well. Add milk slowly, stirring constantly until mixture boils
and thickens. Add salt. Place over boiling water and continue to cook.
Meanwhile, peel and cut the cucumber into small pieces. Cook in the boiling
water until just tender, about 5 minutes. Add white sauce to cucumbers and
their liquid, flavor with onion and serve at once. 4 servings

NOTE: A delicious version of this soup may be made by substituting 1 1/2
cups of richly flavored chicken broth for 1 1/2 cups of the milk.
