Title: Creamy Baked Peaches Categories: None Yield: 1 Servings 4 c Peach slices; thawed if -frozen 1/2 c Sugar 1 tb Plus 1 tsp. unsalted butter 1 tb Cornstarch 1 tb Cold water 1/2 c Evaporated skim milk 1/2 ts Vanilla extract Prep: 10 min, Cook: 25 min. Preheat oven to 450øF. Arrange peaches in a glass baking dish. Sprinkle with sugar. Dot peaches with butter. Bake 15-25 minutes, basting peaches and turning twice until peaches are tender. Combine cornstarch and water in a jar with a tight fitting lid. Shake vigorously. Add milk and vanilla. Shake to combine and set aside. When peaches are done, remove from baking dish with a slotted spoon. Stir milk mixture into baking dish. Return peaches to baking dish and bake another 8-10 minutes or until sauce is thickened.
