Title: Creamy Chicken Salad with Nectarines Categories: None Yield: 4 Servings 3 c Diced cooked chicken 3 c Diced nectarines 1 c Thinly sliced celery 1 tb Minced green onion Juice of 1 medium orange -(about 1/3 cup) 1/2 ts Salt, or to taste 1/8 ts Fresh ground pepper 1/2 c Heavy cream, whipped stiff 1/2 c Mayonnaise Crisp greens 1/4 c Finely chopped walnuts In a large bowl, combine chicken, nectarines, celery, onion, orange juice, salt and pepper; set aside. Lightly combine whipped cream and mayonnaise and then fold into chicken mixture just to coat. Spoon onto plates or bowls lined with greens. Sprinkle with walnuts.
