Title: Creamy Slaw

1/2 c Low-fat buttermilk
2 tb Chopped fresh -or-
2 ts Freeze-dried chives
2 tb Low-fat sour cream
2 tb Lemon juice
1 ts Caraway seed
1/2 ts Salt
1/4 ts Pepper
3 c Finely shredded green
-cabbage (about 1/2 large
-head)
1 c Shredded carrot (about 1
-large)
1/2 c Finely chopped green onions
-(about 5 medium)

Mix buttermilk, chives, sour cream, lemon juice, caraway seed, salt and
pepper in large glass or plastic bowl. Add cabbage, carrot and onions;
toss. Cover and refrigerate about 2 hours or until chilled. 6 servings

Variation: CREAMY JICAMA SLAW: Omit caraway seed. Substitute 1 cup shredded
jicama for 1 cup of the shredded cabbage.
