Title: Creamy Vegetable Soup C/p Categories: Crockpot Yield: 8 Servings 1 lg Onion; chopped 1/4 c Butter 3 md Sweet potatoes; peeled, -chopped 3 md Zucchini; chopped 1 bn Broccoli; chopped 2 qt Chicken stock OR 2 qt Vegetable broth 2 md Red potatoes; shredded 3 Cloves garlic; minced 1 cn Creamed corn OR 3/4 cup -fresh corn kernels 1 ts Celery seed 1 ts Ground cumin 2 ts Salt 1 ts Pepper 2 c Light cream Place all ingredients in a 4 to 5 quart crockpot except cream. Cook on the low setting 6 to 8 hours or until sweet potatoes are tender. Ten minutes before serving, add the cream, if using. Heat through and serve. Formatted by Lynn Thomas.
