Title: Creole Jambalaya Categories: Seafood Yield: 6 Servings 1 tb Shortening 1 tb Flour 1/4 lb Ham; cubed 1/4 c Bell pepper; minced 1 Bay leaf 1 Sprig thyme 1 Sprig parsley; minced 1 Onion; sliced 1 Clove garlic; minced Salt & pepper to taste 1 lb Shrimp; peeled 2 c Tomatoes 1 1/4 c Tomato juice 1 c Uncooked rice Melt shortening in a heavy saucepan over medium heat. Stir in flour, ham and green pepper. Simmer for 5 minutes, stirring constantly. Add remaining ingredients except rice. Bring to a boil. Press rice into liquid.
