1/4 c Dijon mustard
4 Chicken breast halves with
-bone
1/2 c Plain breadcrumbs
2 tb Vegetable oil

Prep: 5 min, Cook: 15 min.

Spread mustard over chicken. Place breadcrumbs in a shallow dish and dredge
chicken to coat. Heat oil in a heavy nonstick skillet over medium heat.
Cook chicken, in batches if necessary, 6-7 minutes per side or until golden
and cooked throughout.
