Title: Crunchy Baked Chicken Categories: Poultry Yield: 6 Servings 2 Fryers; cut up 1 c Melted butter 1 1/2 c Cracker crumbs 1/2 c Grated Parmesan cheese 1/4 c Chopped parsley 1 Clove garlic; crushed -(optional) 1/2 ts Salt Pepper Mix crumbs, cheese, parsley, garlic, salt and pepper. Dip chicken in butter, then in crumb mixture. Arrange in large, shallow baking dish. Pour remaining butter over chicken. Cover and bake at 350 for 30 minutes. Uncover and bake for 45 minutes or until tender.
