Title: Crusty Horseradish Chicken Categories: Poultry, Tried and t, M. c. Yield: 4 Servings 1 lb Boned and skinned chicken -breast halves 3/4 c Breadcrumbs, wholewheat 1/4 ts Salt 1/4 ts Freshly ground pepper 2 tb Prepared horseradish 1 tb Dijon mustard 1/4 c White wine Preheat oven to 350 degrees. Cut meat into 4 portions. On a plate mix together the bread crumbx, salt and pepper. In a bowl stir together the horseradish, mustard and wine. Dip chicken in the horseradish mixture until well coated. You can marinade for up to 1 hour for a stronger flavor. Roll the chicken in the breadcrumbs to coat evenly. Place pieces in a casserole (not glass). Don't let the pieces touch. Bake uncovered for 25-30 mins. until firm to the touch.
