Title: Cucumber Salad with Dill Vinaigrette Categories: Side dishes, Salads* Yield: 4 Servings 1 lg English cucumber; thinly -sliced 1/2 c Sweet red onions; thinly -sliced 1/4 c Extra virgin olive oil 1/4 c White wine vinegar 1/4 c Fresh dill week Salt & freshly ground -pepper; to taste Combine dill and vinegar. Slowly whisk in olive oil. Allow to rest at room temp 30min. Toss cucumber and onion slices with vinaigrette. Season to taste with S&P.
