1 c Chopped & pitted dates;
-preferably the dry kind
1 tb Chopped fresh ginger
1/2 ts Cayenne
1/2 ts Salt
4 tb Water
2 tb Chopped fresh coriander
-leaves; (optional)
1 Lemon; (or 1/2 c. tamarind
-pulp, seeds removed) ,
-juice of

Combine all ingredients except the lemon juice in the blender and blend
well. Transfer paste to a bowl, squeeze lemon over it, and mix with a fork.
