Title: Date Meringue Pie Categories: Pie Yield: 1 Servings 1 c Vanilla wafer crumbs 1 ts Baking powder 1/4 ts Salt 3 Egg whites; stiffly beaten 1 c Sugar 1 c Chopped dates 1/2 c Chopped pecans 1 ts Vanilla 1 c Cream; whipped Combine crumbs, baking powder and salt. Fold sugar into egg whites. Fold crumb mixture, dates, nuts and vanilla into whites. Pour into greased 9-inch pie pan. Bake at 350 for 25-30 minutes. Serve with generous dollops of whipped cream.
