Title: Diabetic Rice Pudding Categories: None Yield: 1 Servings 1/2 c White rice 1/4 c Sugar 3/4 c Water 1 ts Vanilla extract 2 c Skim milk 1/2 c Raisins Cook the rice in water over medium heat until tender, about 45 minutes. Add the skim milk & sugar. Cook slowly over low heat until thickened, about 30 minutes. Cook, add the vanilla & raisins and spoon into six serving dishes.
