Title: Edam Muffins Categories: Breads, Muffins, To post Yield: 16 Servings 2 c All-purpose flour 2 tb Sugar; up to 4 2 1/2 ts Baking powder 1/2 ts Salt 1 1/2 c Shredded Edam cheese; about -6 oz 1 Egg 1 c Milk 1/4 c Butter or margarine; melted Sift flour, sugar, baking powder and salt together. Fold in the cheese, coating the cheese with the flour mixture. Add the unbeaten egg, milk and melted fat; stir quickly and lightly until mixed but do not beat. Spoon into well greased muffin pans, filling each cup 2/3 full. Bake at 400 F for 20 to 30 minutes according to size of muffin cups. Makes 16 medium muffins.
