2 Eggs; hardboiled for 10-12
-minutes (cool them in the
-refrigerator overnight
-before you peel them)
1 -(up to)
1 1/2 ts Mayonnaise (or low-fat
-substitute)
1/4 ts Dry mustard
1 Scallion; minced
Salt & pepper to taste

Mix 'em up! Slap it between 2 slices of wheat bread and eat it up fast,
before your roommate gets interested.

Another variation for people who like marinated foods is to leave out the
dry mustard and add chopped dill pickles and a little pickle juice. Leave
the salad in your fridge overnight to develop FLAVOR (only works if you
don't have a roommate, spouse, or significant other).
