Eggs Florentine
Title: Eggs Florentine Categories: Eggs, Brunch, 1 Yield: 4 Servings 4 lg Island eggs 4 tb Pecorino Romano cheese 3 tb Olive oil Salt and pepper; to taste 1 lb Fresh spinach Heat oven to 350 degrees. Clean and drain spinach. Put oil in saucepan; when hot, add spinach. Cover and cook until tender. Add salt and pepper. Arrange spinach in 4 individual oven proof dishes. Break 1 egg over each and sprinkle 1 tablespoon of cheese on each. Bake about 3 minutes until egg white is firm but soft.
