Title: Enchilada Casserole Categories: None Yield: 1 Servings ----------------------------------FILLING---------------------------------- 2 lb Ground beef 3 tb Chili powder -or- 1 cn Chopped green chili 1 md Chopped onion 1 Clove garlic chopped fine 1 cn Tomato sauce Salt and Pepper to taste ----------------------------------TOPPING---------------------------------- 2 c Grated cheese 1 cn Cream of chicken soup 3/4 cn Milk ------------------------------BOTTOM AND SIDES------------------------------ 12 Corn tortillas Brown meat, onion and garlic ~ add tomato sauce, chili, salt and pepper. Heat well. Line a casserole dish with tortillas ~ Pour in meat mixture, cover with more tortillas, add soup and milk to top of tortillas and sprinkle with the cheese.
