Title: Fluffy Potato Casserole Categories: Tnt, Vegetables, Potato Yield: 1 Servings 2 c Mashed Potatoes 1 pk (8 Ounce) Cream Cheese; see 1 sm Onion; Finely Chopped 2 Eggs; Well Beaten 1 tb Flour 1/4 ts Salt 1/4 ts Black Pepper 1 cn (3 Oz.) French Fried Onion -Rings Combine all ingredients with the exception of the can of onions in electric mixer bowl. Cream until fluffy. Pour into a greased 1 1/2 qt. casserole. Spread crushed onions on top and bake uncovered at 350 degrees for 30-35 minutes Note: My low fat and variation: Use non-fat cream cheese and eliminate the eggs. Use some milk to thin to desired consistency. I have used lite sour cream and some non-fat Ranch dressing dip. That is really yummy.
