Fresh Apple Cake
Title: Fresh Apple Cake Categories: Cakes Yield: 1 Servings ------------------------------------CAKE------------------------------------ 1 1/2 c Wesson Oil 2 c Sugar 3 md Eggs 3 c Cake Flour 1/2 ts Salt 1 ts Baking Soda 2 ts Vanilla 1 c Chopped Pecans 3 c Apples; finely chopped ----------------------------------FROSTING---------------------------------- 1 Stick Butter Or Margarine 1 1/2 c Brown Sugar 1 c Granulated Sugar 1/2 c Powdered Sugar 1/2 c Evaporated Milk Marshmallows; large, 10 to -12 CAKE: Combine oil, sugar and eggs; mix well. Sift together flour, salt and baking soda. Add to mixture. Add vanilla and fold in nuts and apples. Grease and flour pan(s). Can be baked in a bundt or tube pan at 350 degrees for 1 to 1 1/4 hours, a 13x9x2 pan at 350 degrees for about 45 minutes, 3 8-inch cake pans at 350 degrees for 35 minutes or 2 9x5x3-1/2-inch loaf pans at 350 degrees for about 45 minutes. FROSTING: Mix all ingredients, except marshmallows, in pan and boil for about 4 minutes. Add marshmallows and stir until melted. Beat until thick enough to spread.
