Title: Fresh Apple Cake with Brown Sugar Glaze Categories: None Yield: 12 Servings 3 Eggs 2 c Sugar 1 c Cooking oil 3 c Sifted all-purpose flour 1 ts Baking soda 1/2 ts Salt 1 ts Ground cinnamon 2 ts Vanilla extract 3 c Chopped apples; peeled -(better if apples are tart) 1 c Pecans; chopped 1/2 c Raisins -----------------------------BROWN SUGAR GLAZE----------------------------- 1 c Brown sugar; (dark or light) 1/2 c Margarine 1/2 c Milk In a large mixing bowl beat eggs and sugar together. Add oil and mix. Combine dry ingredients in a separate bowl and add this to the egg mixture. Mix well; add vanilla and fold in Chopped apples, pecans, and raisins. The batter will be very thick. Pour batter into a greased 1O-inch tube pan. Bake in preheated 325°F oven for one hour or until cake is done. GLAZE: Bring glaze ingredients to a boil for 2-3 minutes in small saucepan and pour over hot apple cake in tube pan. Let stand for 2-4 hours.
