Fried Bread Puffs (Sopaipillas)
Title: Fried Bread Puffs (Sopaipillas) Categories: Breads Yield: 1 Servings 2 tb Lard 2 c Flour 2 ts Baking powder 1 ts Salt 2/3 c Lukewarm water Veg oil Cut lard into flour, powder and salt completely. Sprinkle in water, 1 Tbls. at a time, tossing with fork until all flour is moistened and dough almost cleans side of bowl. Gather dough into ball. Cover and refrigerate 30 minutes. Heat oil (1-2") to 400 degrees. Roll dough on lightly floured surface into rectangle, 12x10. Cut into rectangles, 3x2. Fry 3-4 at a time until puffed and golden, turning once, 2 minutes.
