Title: Goat Cheese and Pistachio Spread Categories: None Yield: 1 Servings 2 pk (3 oz) goat cheese; softened 1/4 c Chopped pistachios 1 lg Clove garlic; minced 1/2 ts Salt 1 Stick; (1/2 cup) butter, -softened 1/4 c Chopped fresh chives Here's a spread I served on Thanksgiving as a pre-dinner treat to keep the crowd from getting restless smelling the turkey hour after hour.... In food processor, combine garlic and salt, let sit for 10-15 minutes. Then add the goat cheese, butter and chives. Blend until smooth. Stir in the pistachios, garnish with more chives.
