Title: Golden Zucchini Muffins Categories: None Yield: 1 Servings 2 Eggs 2/3 c Grated carrots 2/3 c Raisins 1/2 ts Vanilla 1/2 c Melted margarine or butter 1/4 ts Allspice (or pumpkin pie -spice) 1/2 ts Baking powder 1 ts Ground coriander 1 1/2 c Flour 2/3 c Grated yellow zucchini Preheat oven to 375oF, prepare pans. Put the first seven ingredients into a bowl & mix well. Add the Remaining ingredients & blend until just mixed. Spoon into pans & bake for 20-25 min.
