Title: Grape Caesar Salad Categories: Grapes, Salads, Meatless Yield: 1 Servings 3 c Torn Romaine lettuce 1 c Seedless grapes 1/3 c Shredded Swiss cheese 1/3 c Garlic croutons -------------------------------LIME DRESSING------------------------------- 2 tb Lime juice 1/2 ts Worcestershire sauce 1/2 ts Salt 1/4 ts Minced garlic 1/4 ts Coarsely ground black pepper 2 tb Olive oil ----------------------------------TOPPING---------------------------------- 2 tb Shredded Parmesan cheese Toss lettuce, grapes, Swiss cheese and croutons in small bowl. Pour Lime Dressing over greens mixture; toss to mix. Sprinkle with Parmesan cheese and toss lightly. Makes 4 (1 cup each) servings. For the Lime Dressing: Combine ingredients lime juice through the pepper. Mix well. Beat in 2 tablespoons olive oil until well blended. Makes about 1/3 cup. Nutritional Analysis Per Serving: 152 Cal., 5 g pro., 10.4 g fat (57% Cal. from fat), 10.9 g carb., 10 mg chol., 0.8 g fiber and 381 mg sodium.
