Title: Green Bean and Jicama Salad Categories: Digest, Oct., Fatfree Yield: 1 Servings ----------------------------------DRESSING---------------------------------- 1 tb Soy sauce 1 tb Rice vinegar 2 tb Fresh lemon juice 1/2 ts Honey -- or equiv. Sweetener 1/2 ts Ground ginger 1/2 ts Dark sesame oil ---------------------------------VEGETABLES--------------------------------- 1 lb Fresh green beans 1 md Jicama -- peeled and Julienned 1 Red onion -- thinly sliced Blanch the green beans, shock them in cold water to halt the cooking process, chop them into bite-size pieces, and set them aside. Whisk together dressing ingredients. Add green beans, jicama, and red onion. Toss well with dressing.
