Title: Green Mango Chutney Categories: None Yield: 1 Servings 9 lb Green Mangoes just starting -to get ripe , still hard , -but not rock hard , peeled -and cubed 1/4 inch 1 lb Apples Granny Smith peeled -and cubed 1 lb Preserved Ginger chopped -small 2 oz Mustard Seed 2 ts Cayenne Powder [imperial] -size metric 10 ml 1 oz Cinnamon 1 lb Sultanas 1 c Raisins Halved [imperial] -250 ml 6 lb Sugar [Brown] is better 1 oz Garlic [never bothered to -measure this i use 1 small -sized Knob] chopped small 3/4 oz Ground Ginger 1/4 lb Salt 1 1/2 Bottles Vinegar Malt or -Brown [US 1 QUART] 1 lg Onion Chopped small 6 sm Chilies [use more if you -like] chopped small[always -used birds eye- fiestas ? , -would use serranos seeds -and all] 1 oz Whole Black Peppercorns tied -in a Muslin bag [sometimes -i just throw them in.] 2 oz Mixed Spice [Used to be in -packets now in jars , a mix -of cinnamon ,allspice and -nutmeg] i suppose you have -it there (up to 3) dedicated to the lady from 7/12th ave Put all Ingredients Except Mixed Spice in a Large Pan -Stainless or Enamel .Stand overnight . Next Morning add mixed spice and simmer 2-3 hours ,remove peppercorn bag ,place in sterilized jars and seal when cold.. Leave for as long as you can resist - generally the next day is too long... Now this is the original recipe i work from , i adjust it to the number of green mangoes i can get now i don't have a tree . Never made it with 9 pounds of mangoes , don't think I could afford to !
