Title: Green Tomato Salsa

1 Poblano peppers
1 c Seeded green tomatoes,
-finely chopped
1 Jalapeno, cored, seeded,
-mince
2 tb Fresh cilantro, chopped
1/2 ts Ground cumin
2 tb Red wine vinegar
1/4 c Red onion, diced

Roast the poblano pepper. Peel, remove, and discard core and seeds, then
chop. Mix in a medium size bowl with remaining ingredients.

Maybe if you quadrupled the recipe and gave away to friends, you'd be on
your way to using up your garden's surplus!
