Title: Grilled Quesadilla Categories: None Yield: 1 Servings Flour tortillas Shredded cooked chicken ( or -any cooked meat) Scallions or onions Refried beans (or cooked -mashed black beans) Shredded cheddar and/or -other cheeses Sliced hot pepper rings Black olives (?) Hot sauce of choice I thought that I would share this recipe that I tried a week or so ago. I got it out of one of those coupon circulars (yep, I am a bargin betty shopper)!!! The original recipe, which I don't have with me, didn't include some of the items that I have listed but as we all know, add or delete items as you like! This is great for a light meal or you can use as a snack. Brush flour tortillas with hot sauce, spread a layer of beans, then meat, peppers and then shredded cheese, and place another tortilla on top. Grill on grill over low coals for a short time, to just get the grilled lines on it then flip (carefully) until cheese is melted and ingreds are heated through (I closed the lid on my grill for a bit to help this meld). Let cool and cut into wedges. I served mine with lettuce, sour cream and salsa and sides of hot sauce. Great stuff!!!! Originally it only called for buffalo sauce, chicken and cheese.
