Title: Grouper with Salsa Verde Pepin

1/4 c Olive oil
1/3 c Minced onion
1 sm Minced green pepper
1 Clove garlic crushed
1/4 c Wine vinegar
2 tb Minced parsley
Salt to taste
Pepper to taste
2 lb Grouper fillets
Seasoned flour
1/4 c Clarified butter

Saute onion, green pepper and garlic in 1/4 cup olive oil over high heat.
Stir in vinegar, parsley, salt and pepper. Keep sauce warm while you cook
fish. Dredge 2 pounds grouper fillets in seasoned flour. Saute in 1/4 c
clarified butter at high heat for 3 minutes each side. Pour sauce over
fillets and serve.
