Title: Helen Doyle's Irish Soda Bread Categories: Breads Yield: 12 Servings 3 c All-purpose flour 1 c Raisins 1/4 c Sugar 1 tb Caraway seeds 2 ts Baking powder 1 ts Salt 1/2 ts Baking soda 1 1/2 c Nonfat buttermilk Vegetable cooking spray Combine first 7 ingredients in a large bowl; stir well. Add buttermilk; stir well until a dough forms. Turn dough out onto a lightly floured surface, and knead lightly 3 to 4 times. Pat dough into an 8-inch round cakepan coated with cooking spray. Bake at 350 degrees for 45 minutes or until a wooden pick inserted in center comes out clean and bread is golden. Let cool in pan 5 minutes; loosen edges of bread with a knife. Remove from pan; let cool on a wire rack. Yield: 12 servings. Per serving: 179 Calories; 0g Fat (2% calories from fat); 5g Protein; 40g Carbohydrate; 1mg Cholesterol; 309mg Sodium Serving Ideas : Cut into wdeges.
