Title: Herby Cheese and Rice Categories: Grains Yield: 4 Servings 1 c White rice 2 tb Olive oil 3 tb Fresh basil; parsley, or -mix of the two or 1T dried -herbs 1 1/2 c Mozzarella; grated 2 tb Parmesan; grated Cook rice. Empty into large bowl and stir in olive oil and herbs. Stir mozzarella into hot rice--it must melt. Sprinkle parmesan over top and serve immediately.
