Title: Ho-Ho Soup Categories: Soup Yield: 6 Servings 2 cn (10.5-oz) beef broth 1 1/2 cn Water 1 cn (12-oz) vegetable juice -cocktail 2 tb Soy sauce 3 tb Vinegar 1/4 ts Pepper 1/3 c Thinly sliced carrots 1/4 c Chopped green beans 1/2 c Chopped cooked chicken 3 Eggs; beaten Perhaps I should have featured this one before Christmas to show a proper happy frame of mind, though the title does have some obscure derivation. More to the point, it is a whimsical, but quick version of a flavorful chicken- vegetable soup. Combine all ingredients, except eggs. Bring to a boil, then hold at a simmer for about 10 minutes. Stir in beaten eggs. Serve at once to 6 or 8 with salty crackers or with the following "doodles" which seem correspondingly whimsical (see recipe for "Fantasy Fries" in this cookbook).
