Hominy-Chili Casserole
Title: Hominy-Chili Casserole Categories: Rice & grai, Side dishes, Casseroles Yield: 4 Servings 15 oz Chili with beans 1 cn Sliced ripe olives --drained -and divided --2.2-ounce can 1 sm Onion; finely chopped 15 1/2 oz Golden hominy; drained 1 c Shredded sharp cheddar -cheese Combine chili and half of olives; spoon into a lightly greased 1 1/2-quart casserole. Top with onion and hominy, and bake at 350°F for 25 minutes. Sprinkle with cheese and remaining olives; bake an additional 5 minutes. Yield: 4 servings.
