Title: Honey-Carrot-Date Muffins

Yield: 10 Servings

1/4 c Butter or margarine
1/2 c Honey
1/2 c Milk
2 Eggs
1 1/2 c Flour
1 ts (heaping) baking powder
1 ts Salt
1 c Grated carrots
1 c Pitted chopped dates

Melt butter & honey, stir in eggs & milk & beat. Combine dry ingredients &
stir thoroughly. Add to wet mix until just combined, fold in carrots &
dates. Bake at 375øF for 15-20 mins. Makes 10 large muffins. Delicious when
heated & served with butter, cream cheese or marmalade.
