Title: Italian Plum Preserves Categories: Jams, And, Jellies Yield: 1 Servings Nonstick cooking spray 10 c Italian plums (or similar -freestone plums); chopped -and quarter 7 c Sugar Juice of 2 lemons Spray the insides of the pot with nonstick cooking spray. Combine plums, sugar, and lemon juice in pot. Over medium-low heat, mix well to combine. Bring to a boil, reduce heat and simmer, removing foam as it forms. Simmer until thick, about 25-35 minutes ( until 220 degrees) , stirring occaisionally. Ladle into hot sterilized jars to within 1/8-inch of jar top. Place lids on and process in boiling water bath 15 minutes. NOTES : A very luscious jam. It puts commercial plum jam to shame.
