Title: Italian Vegetables Categories: Italian, Rice, Side dish, Salads Yield: 2 Servings 3/4 c Rice 1/4 ts Salt 2 c Water 6 tb Oil 2 tb White wine vinegar 2 tb Soy sauce 1/4 ts Pepper 1/4 ts Turmeric 1/4 lb Spinach 1/2 c Sliced green onion 4 Crumbled slices crisp Bacon Simmer rice, covered, in salted water until rice is done. Drain. Combine oil, vinegar, soy, pepper, turmeric. Stir into the still warm rice. TEAR the spinach into small pieces. Toss spinach, onion and bacon into the rice.
