Title: Jay's Italian Sausage Categories: Sausages Yield: 10 Servings 2 Garlic cloves 1 tb Sugar 5 tb Salt 3 tb Cayenne pepper 1 ts Sage 1 ts Caraway seeds 1 pt Water, iced 1 tb Coriander 1 tb Fennel seeds, cracked 10 lb Pork butt 2 ts Pepper Mix all ingredients well and stuff into 32-35 hog casings.
