Title: Keep on Truckin' Brownies Categories: Cookies Yield: 12 Servings 1/4 c Canola oil 3/4 c Sugar 1/2 c Packed light brown sugar 1 lg Egg 1/2 c Unsweetened applesauce 1/2 ts Vanilla extract 1/3 c Unsweetened cocoa powder 1 c Flour 1/4 ts Salt 1/4 ts Baking powder 1/4 c Semisweet chocolate chips 1 c Marshmallows Whisk together oil, both sugars, egg, applesauce & vanilla until blended. Whisk in cocoa until blended. Stir in flour, salt & baking powder until combined. Pour into an 8 x 8 square baking pan that has been sprayed with Pam. Bake at 375 F for 20 minutes. Sprinkle brownies evenly with chips & marshmallows. Return to oven & bake until marshmallows are lightly golden & a small knife inserted in the center comes out clean (about 5-8 minutes). Cool in pan on a wire rack.
