Title: Kiwi Fruit and Shrimp Saut

Yield: 4 Servings

3 Kiwi fruits
2 -(up to)
3 tb Olive oil
1 lb Shrimp; peeled
3 tb Flour
3/4 c Prosciutto or thinly sliced
-sandwich ham; cut into thin
-strips
3 Shallots; finely chopped
1/4 -(up to)
1/3 ts Chili powder
3/4 c Dry white wine

Peel kiwi. Reserve 4 slices for garnish and chop remaining fruit. In a
heavy skillet or wok, heat oil. Toss shrimp in flour and saut 30 seconds.
Add Prosciutto, shallots and chili powder. Saut another 30 seconds. Add
the chopped kiwi and saut 30 seconds. Add wine and reduce by half . Serve
immediately. Yield: 4 servings.
