Title: Lamb Burgers with Tabouli Categories: Lamb, Meats Yield: 1 Servings 1 c Bulgar (cracked wheat) 1 c Minced parsley 1/4 c Chopped mint 2 Scallion sliced 1 md Tomato seeded and chop 1/3 c Olive oil 1/3 c Lemon juice 3 oz Feta cheese crumbled 1 Minced garlic clove 1 ts Dried oregano 1 1/2 lb Very lean ground lamb In a 2 quart casserole, combine cracked wheat and 2 cup boiling water. Let stand 40-45 minutes until water is absorbed. Stir in next 6 ingredients. Cover and chill 3 hours. Prepare grill as manufacturer directs. In small bowl, mix feta cheese, garlic and oregano. Shape lamb into 12 burgers. Press about 2 teaspoon cheese mixture into center of each burger, pinching lamb to cover opening. Place burgers on grill over medium hot coals; cook 12-15 minutes, turning once. Serve with tabouli. |
