Title: Lehighton's Carrot Cake Categories: None Yield: 1 Servings 2 c Sugar 1 1/2 c Oil 4 Eggs -----------------------------------ICING----------------------------------- 8 oz Cream cheese 2 ts Vanilla 1/4 c Butter or margarine 1 c Confectioner's sugar 1 c Nuts Notes By Karen Schleicher, Lehighton. The Times News, PA Mix above mixture and add 3 cups grated carrots. Mix 2 cups of sifted flour, 2 tsp. baking soda, 2 tsp. cinnamon, 1 tsp. salt. Add to mixture. Place in greased pan.
