Title: Luby's Waldorf Salad Categories: None Yield: 9 Servings 4 c Cubed Winesap apples 2 c Canned pineapple tidbits, -drained 1 cup chopped -celery 1/2 c Mayonnaise 1/4 c Whipping cream 2 tb Powdered sugar 1 dr Vanilla extract 1 tb Chopped walnuts 1. In large bowl, combine apples, pineapple, celery, and mayonnaise. Toss lightly to coat evenly. 2. In small chilled bowl using chilled beaters, beat whipping cream at high speed on electric mixer just untilk stiff peaks form. Do not overbeat. Blend in sugar and vanilla. Fold intoapple mixture. Cover and refrigerate at least 2 hours. Garnish with walnuts. Tow cups cubed Granny Smith apples may be substituted for 2 cups of the Winesap apples. Pecans may be substituted for walnuts.
