Title: Lucious Beet and Orange Salad

Yield: 6 Servings

3 tb Vegetable oil
3 tb Cider vinegar
1 ts Sugar
1/4 ts Ground cumin
1 cn (16 oz) sliced beets, cut
-into halves or quarters,
-drained or fresh cubed.
1/4 c Chopped red onion
2 lg Oranges, peeled and
-sectioned
Lettuce leaves

In medium bowl combine oil, vinegar, suger and cumin. Add beats and onion,
toss gently to coat. Cover, chill to blend flavors. With slotted spoon,
remove beets and onion from marinade. Arrange with oranges on lettuce-lined
platter. Drizzle with 3 Tablespoons marinade. note: I like to use drained
mandarin oranges and use some of the juice to sprinkle over all.
