Title: Mary's Potato Pancakes Categories: Family, Potatoes, Breakfast, Pancakes Yield: 1 Servings 2 c Mashed potatoes; left-over 1 c All-purpose flour 1/2 c Maui onion; minced 1 lg Island egg Salt and pepper; to taste I often fix Potato Pancakes for breakfast using leftover mashed potatoes. BTW, I always use Idaho potatoes, milk, butter and salt for my mashed potatoes. Next morning I take the leftovers (say about 2 cups) add 1 cup of flour, 1/2 cup minced Maui onion, and an egg. I drop them by heaping tablespoons onto a hot skillet to which I've added butter and/or olive oil. I reduce the heat to medium and allow them to brown on one side. When I flip them I salt and pepper and wait for the other side to brown. They are delicious and a family favorite! Enjoy!
