Title: Meat Loaf and Lemon Categories: Beef Yield: 6 Servings 1 1/2 lb Ground chuck 3 tb Butter, melted 1 1/2 ts Salt 1/2 ts Pepper 2 Lemons, juice and grated -rind 2 c Bread crumbs 2 Eggs, lightly beaten 1 1/2 c Milk 1 Lemon, sliced paper thin In a mixing bowl, combine all the ingredients and mix them well. Pack the mixture into a 9 x 5 in loaf pan. Bake the meat loaf uncover, at 350° for 1 1/2 hours. For the final 10 minutes of cooking, garnish the meat loaf with the lemon slices. Spray the loaf pan.
