Title: Mexican Ham and Egg Bake Categories: None Yield: 1 Servings 6 Eggs 1/4 c All purpose flour 1/2 ts Baking powder 1/2 ts Salt 1/4 lb Canned green chilies; diced, -(wear rubber gloves) 1 c Cottage cheese 1/2 lb Monterey Jack cheese; -shredded 2 ts Unsalted butter 1 1/2 lb Cooked ham; cut into 3/4 -inch slices 1 1/2 c Salsa Prep: 10 min, Cook: 30 min. Preheat oven to 375øF. Whisk eggs in a mixing bowl. Add flour, baking powder and salt and mix thoroughly. Stir in next 3 ingredients. Transfer to a buttered 9 inch baking dish. Bake 30-35 minutes or until center is just set. Let stand 5 minutes before cutting into squares. Melt butter in a heavy nonstick skillet over medium heat. Saut‚ ham 2-3 minutes per side until browned. Transfer to a platter and keep warm until ready to serve with eggs and salsa. This recipe serves 8 people. Because this recipe is for a particular size pan, it adjusts the number of servings only in multiples of 8.
