Mexican-Style Meat Loaf
Title: Mexican-Style Meat Loaf Categories: Low-fat, Meats, Mexican, Meats Yield: 7 Slices No-stick corn oil cooking Spray 1 lb Extra-lean ground turkey 3/4 lb Ground beef sirloin 2 Green onions, chopped 3/4 ts Salt 3/4 ts Ground cumin 1/2 ts Dried marjoram or oregano 1/4 ts Freshly ground black pepper 1 c Fresh bread crumbs 7 oz Jar sweet roasted red pepper Drained and chopped 1 Egg white 1/2 c Canned black beans, drained Heat oven to 350 degrees. Lightly coat an 8x5x3 inch loaf baking pan with no-stick corn oil cooking spray; set aside. In a large bowl, combine the extra-lean ground turkey, ground sirloin, green onions, salt, cumin, marjoram or oregano, black pepper, bread crumbs, red pepper, egg white and black beans. Mix with your hands or a sturdy spatula to thoroughly combine all ingredients. Pack into prepared pan and bake 45 minutes. Remove from heat and allow to rest 5 minutes before slicing.
