Miami Muffins


Title: Miami Muffins
Categories: Diabetic, Low-cal, Low-fat, Muffins
Yield: 12 Servings

1/2 c Fructose
2 tb Canola oil
1/2 c Fat-free yogurt; plain
1 Egg white
1/4 c Orange juice
2 c Flour
1 1/2 ts Baking powder
1/8 ts Salt
1/2 ts Nutmeg
1/2 c Mango; chopped
1/4 c Dried apricots
1/4 c Toasted almonds; chopped

Mix all ingredients. Pour batter into sprayed muffin tins. Bake at 350
degrees for 10-15 minutes.

Makes 12 large muffins. 1 serving = 1 muffin

1/2 fruit exchange 1 fat exchange
