Mixed Bean Vegetable Soup
Title: Mixed Bean Vegetable Soup Categories: None Yield: 1 Servings 2 c Mixed dried beans, washed -and drained 8 c Water 1 Clove garlic, minced 1 lg Onion, chopped 2 tb Lemon juice 2 tb Honey 2 Bay leaves 1 cn (24-oz) vegetable or tomato -juice 1 cn (16-oz) tomatoes, undrained 2 c Sliced carrots 1 1/2 c Shredded cabbage 1 c Chopped celery 1/4 c Chopped green bell pepper Beef bouillon to taste Salt and pepper (From Spiral Co-op Natural Foods, Hastings, MN) In large container, cover beans with 3 quarts water. Soak overnight (minimum 12 hours). Rinse and combine in large soup pot with 8 cups water, garlic, lemon juice, honey and bay leaves. Simmer, covered, for 2 hours. Add remaining ingredients and simmer, covered, for 1/2 to 1 hour, depending on size of vegetables. Remove and discard bay leaves before serving. Substitutions on vegetables is encouraged.
